10 Easy To Make Lunches For the Stay At Home Investor

As an investor on my computer all day in my home office, if I can eat in front of my computer I will. Over the last few years I have found some easy to make lunches that really just hit the spot and fill me up right:

  1. Peanut Butter and Jelly - This takes all but two minutes to make and throw some potato chips or an apple on the side and you have yourself a lunch. A classic that never gets old.
  2. Chicken Nuggets - Preheat the oven to 425 degrees, throw 10 - 20 nuggets on a cookie tray on top of some tin foil and 15 minutes later lunch is served. I like the fact that I can use ketchup, or some ranch as dipping, barbecue sauce, or heck eat them plain if I want. Keeps the variety there.
  3. Macaroni - This is probably slightly out of the easy to make range (atleast for me), but still some people like a good old boil of the cheesy stuff every once in a while. I like to throw in a tad bit extra milk to make it soupier and eat it straight out of the pan from my desk with a glass of milk. No need to waste dishes when you don’t have to right?
  4. Hot Dogs - Most people don’t know about this trick, but all you do is wrap paper toil around a hot dog and stick it in the microwave on high for about a minute or so (unless you have the 15 second ones). What you are looking for is the hot dog to split down the center, then you know its done and ready for the bun. Use a paper plate to for the easy throw a way afterwards.
  5. Frozen Pizza - Probably not the best thing for you, but heck it is delicious. Whatever is on sale at Meijers is what I usually buy (Tombstone is my favorite but it’s rarely on a deep discount sale). Though I don’t recommend it, you can eat the whole pizza in one sitting which is about 1500 calories depending on the brand. I am a skinny 150 pound 21 year old with a family history of high metabolism; the pizza doesn’t even phase me.
  6. A Classic Sandwich - Buy it yourself or have your wife stack up your fridge with all the good meats and your favorite bread for easy access whenever you please. I personally enjoy a turkey and ham sandwich every once in a while.
  7. Grilled Tortilla - This is an amazing lunch my roommate taught me to make recently. What you do is take a frying pan, place a single tortilla in it, and turn the burner on medium (5 power). While its warming up spread some mixed cheese on the tortilla and then place some pre sliced turkey meat on the cheese. Wait a few minutes until the cheese is melted and the turkey is hot, slide the tortilla off, roll it over itself and you have yourself a grilled tortilla to go.
  8. Pre Made Salads - I like these a lot and they are basically kits with everything you need inside. Typically I buy the Caesar kit which includes the lettuce, dressing, and croutons all together. Don’t eat just half though, get the family bag and eat it all in one serving.
  9. Spaghetti Os - These are typically a last resort for me as they rarely ever “hit the spot”. Since they are canned and last for almost ever I always keep one or two cans deep in my cabinets for that day when I am out of food, literally.
  10. Leftovers - Want the same meal you had earlier in the week? Hit up the leftovers and hope they still taste good microwaved.

This is an amusing post because I can relate to the quick lunch concept. I would add that you can fold up a small pizza in half and eat it like a sandwich, thus saving the need to slice it. And I might add frozen burritos to the list. With enough hot sauce or better yet fresh salsa even the cheap ones can taste okay.

Left overs is key to our meal plan. Cook on the weekends and reheat during the week. A can opener and microwave are frequent tools in our kitchen by Thursday night usually.

You forgot my favorite… Macaroni with Hotdogs. I cut up my hotdogs into little pieces and mix it in with my macaroni. Mmmm Now I’m hungry.
